Peanut Butter Protein Balls

Ingredients 1 cup natural peanut butter ½ cup vanilla or chocolate protein powder ½ cup old-fashioned oats ⅓ cup honey ¼ cup small or mini chocolate chips 2–4 tablespoons milk, as needed 1 teaspoon vanilla extract Pinch of salt Directions In a large bowl, mix together the peanut butter, honey, vanilla, and salt. Stir in the protein powder and oats. Add the mini chocolate chips and mix until combined. If the mixture is too dry to roll, add milk 1 tablespoon at a time until it holds together. Roll into approximately 16–20 bite-sized balls. Refrigerate for at least 30 minutes before enjoying. Optional Protein Boost For even more protein, replace a few tablespoons of oats with additional protein powder or add powdered peanut butter.

Slow Cooker Salsa Chicken & Rice Bowl

Our Easy Salsa Chicken is packed with flavor and made with just a few simple pantry staples. Add chicken, your favorite salsa, taco seasoning, beans, and corn, then let it cook until tender and ready to shred! Servings: 6 Prep Time: 10 minutes Cook Time: 4–6 hours (Low) or 2–3 hours (High) Ingredients 4 boneless, skinless chicken breasts or thighs 1 (16 oz) jar salsa 1 packet taco seasoning 1 cup chicken broth 1 (15 oz) can black beans, drained and rinsed 1 can corn 2 cups cooked white or brown rice Juice of 1 lime Fresh cilantro, chopped (optional) Toppings Shredded cheddar or Mexican blend cheese Sour cream or plain Greek yogurt Diced avocado Green onions Fresh pico de gallo Tortilla strips Jalapeños Instructions: Place the chicken in the slow cooker. Sprinkle with taco seasoning. Pour in the salsa and chicken broth. Cook on: Low: 4–6 hours High: 2–3 hours Shred the chicken with two forks. Stir in the black beans and corn. Cook another 15–20 minutes until heated through. Add the lime juice and stir. To Serve: Spoon cooked rice into bowls. Top with the salsa chicken mixture and finish with your favorite toppings.
